kozhikatta – a Kerala delite


 

Ingredients:

  • Rice flour (2 cups)
  • Grated coconut (1 cup)
  • Sugar (4 tsp)
  • Salt  (a pinch)
  • Water

Method:

  1. To make stuffing, take a bowl, add grated coconut, sugar and keep it aside.
  2. In another bowl, add the rice flour, pinch of salt, water and mix it well in the consistency to make a dough.
  3. Take a portion of dough, make is a round shape with your palms and press it in the center. Add the stuffing, seal it and give it a round shape.
  4. Steam the rounds in a steamer for about 15 minutes or untill the rice flour cooks completely.

Kozhikatta is ready to be served hot as evening snacks or as dessert.

    its better to use sweet rice flour or simply add icing sugar to the dough.there’s a screaming need for
    a sweet dough.in the steam water i also added some lemongrass essence in the steam water or the sticks in the basket before placing the balls.it adds some life to the recipe.
