Chicken cutlet recipe


A simple Chicken cutlet recipe. Tastes almost like the chicken patty in McDonalds chicken burger.


Ingredients:

  • Potato(1 large, boiled & mashed)
  • Minced chicken (370 gms)
  • Red chilly powder (1 tsp)
  • turmeric powder(a pinch)
  • Cumin powder(1/2 tsp)
  • Ginger garlic paste (1 tsp)
  • Salt as per taste
  • Egg (1, beaten)
  • All purpose flour (1 cup)
  • Bread crumbs (1 cup)
  • Oil to deep fry

Method:

  1. In a mixing bowl, add mashed potato, minced chicken, Red chilly powder, turmeric powder, Cumin powder,Ginger garlic paste, salt & mix well.
  2. Take a small portion of the mixture and give it a shape.
  3. Dip the cutlet in the all purpose flour and coat the flour all over.
  4. Now dip it in the beaten egg and coat it all over.
  5. Now dip it in the bread crumb and cotat it all over.
  6. Heat oil in a pan to deep fry.
  7. Add the cutlet in the oil to deep fry.
  8. Deep fry till it turns nice golden brown in color.

Delicious and crispy Chicken cutlet is now ready to be served. Enjoy!

Aloo Tikki



Aloo Tikki is potato patties made with  spices and is a popular Indian street food and used in many recipes. Of late it is also become popular in burgers in India with brands like McDonalds introducing it as a veg burger option.



Ingredients:

  • Potatoes (2 large, boiled & mashed)
  • Carom seeds(1/2 tsp)
  • Cumin powder(1/2 tsp)
  • Black pepper powder (1/2 tsp)
  • Chilly powder( 1/2 tsp)
  • Salt (1 tsp) or as per your taste
  • Green chilly (1, chopped)
  • Coriander leaves (few, chopped)
  • Ghee/Butter (2 tbsp)

Method:

  1. In a bowl, add potaotes, carom seeds, cumin powder, black pepper powder, chilly powder, salt green chilly, coriander leaves and mix well.
  2. Make small balls of lemon size and shape the tikkis of your choice. I m flattening using my fingers and palm.
  3. In a non stick pan, heat the ghee or butter and place the tikkis over it.
  4. Shallow fry these tikkis till it turns light golden brown in color on one side. Turn the tikkis and cook the other side as well.
  5. This would take about 4 minutes each side.

Take it out of the pan and serve hot tikkis with mint chutney or tamarind chutney.

Paneer Pakoda



Paneer Pakoda is an Indian cottage cheese starter dish made of spices and seasoned chick peas flour.


Ingredients:

For Paneer/Indian cottage cheese marination:

For seasoned batter:

  • Chick peas flour (1 cup)
  • Salt (1 tsp)
  • Chilly powder(1/2 tsp)
  • Baking powder(a pinch)

Method:

In a bowl, add paneer/Indian cottage cheese, chilly powder, salt, mix well and keep it for 5 minute.

In another bowl, add chick peas flour, chilly powder, salt, baking powder, little by little water and make a smooth batter.

Dip the marinated Paneer/Indian cottage cheese in the seasoned batter and coat it all over.

Heat oil in a pan and deep fry the paneer pakodas till it turns light golden brown in color.

Switch off the flame and drain away the excess oil from the pakodas into a tissue paper.

Paneer pakodas are now ready and tastes best when served with mint chutey. Enjoy!

Tamarind Chutney (Imli ki Chutney)


Tamarind chutney is used for making all chaat dishes (Indian Starters) such as Papdi chaat, dahi papdi chaat, Palak chaat, Dahi Bhalla, etc. This video demonstrates how to make Tamarind chutney.



Ingredients:

  • Tamarind (100 gms, soaked in water)
  • Water (enough to immerse tamarind)
  • Dried ginger (2, chopped). If dried ginger is not available, use fresh ginger and double the quantity.
  • Jaggery (100 gms)
  • Chilly powder (1 tbsp)
  • Asafoetida powder (1/2 tsp)
  • Coriander seeds (1 tbsp)

Method:

  1. In a vessel, add tamarind, water, dried ginger, jaggery, chilly powder, asafoetida powder, coriander seeds, mix well & bring it to boil.
  2. Slow the flame and cook it for 15 minutes or till the gravy gets thick in consistency.
  3. Strain the liquid i a bowl with a  strainer and extract all the flavor into it.
  4. The thick gravy is left in the bowl is the tamarind chutney.
  5. Tamarind chutney is formed and can be stored in the refrigerator upto a week.

Tamarind chutney is used for making all chaat dishes such as Papdi chaat, dahi papdi chaat, Palak chaat, Dahi Bhalla, etc.

Kadai Choley (Chick peas)



Kadai Choley, made of Chick peas is the most versatile delicacy in the north of India. It can be served for breakfast, lunch or dinner.

Ingredients:

  • Chick Peas (200gms, boiled)
  • Tomatoes (600 gms, chopped)
  • Ginger paste (2 tbsp)
  • Garlic paste (2 tbsp)
  • Dried red chillies (6)
  • Ghee/Oil (2 tbsp)
  • Garam masala powder (2 tsp)
  • Coriander seeds (2 tbsp)
  • Coriander leaves (1 cup, chopped)
  • Salt as per taste
  • Green chillies( 2 large, chopped)

Method:

  1. Crush the coriander seeds and dried red chilly in a motor & pestle and keep it aside.
  2. Heat ghee in a pan, add garlic paste, saute and cook for 30 seconds.
  3. Add ginger paste and saute again.
  4. Add crushed coriander seeds and dried red chilly and saute for 20 seconds.
  5. Add chopped tomatoes, green chilly, 1/3rd of coriander leaves and bring it to boil. Saute till the fat starts to leave the tomatoes.
  6. Add the chick peas, mix well and cook for another 5 minutes.
  7. Add salt as per taste and garam masala to it.
  8. Garnish with coriander leaves.

Kadai Choley is now ready to be served hot with roti, naan, chapaties or puri.

Crispy Papdi Chaat & Dahi Papdi Chaat



Papdi Chaat & Dahi Papdi chaat are simple to make recipes, however they taste very different. These are the famous Indian Street Snacks and people crowd on the streets in the evening time to taste these finger licking Chaat dishes.

Method:

To make Papdi Chaat

  • Spread the puri/papdi in a serving plate, add drops of mint chutney, tamarind chutney, Chaat masala and thin sev/nylon sev
  • Papdi Chaat is ready to be served.

To make Dahi Papdi Chaat

  • Spread the puri/papdi in a serving plate.
  • Top the puri/papdi with mashed potatoes (1/2 tsp on each puri).
  • To it add the whisked or beaten yoghurt (1 tsp each), mint chutney (1/2 tsp), tamarind chutney (1/2 tsp)
  • Sprinkle pinch of chaat masala on the toppings.
  • Sprinkle thin sev/nylon save over it in a good quantity.

Dahi Papdi chaat is ready to be served.

Punjabi Samosa



Punjabi Samosa is a famous snack across the country. It is the stuffing inside that enhances the flavor and adds taste to this dish. It is an excellent Chat. Ingredients and measurements are mentioned below the video.

Ingredients

  • Potato (boiled & mashed, 4)
  • Green peas (1/2 cup)
  • All purpose flour/Maida (2 cups)
  • Oil (4 tbsp)
  • Coriander leaves (few, chopped)
  • Ginger, garlic (chopped, 1 tsp each)
  • Green chilly (1, sliced)
  • Garam masala( 1 tsp)
  • Dry mango powder(1/2 tsp)
  • Cumin seeds/Jeera (1 tsp)

Method:

  1. In a bowl, add all purpose flour/maida, salt, oil and mix well so that the oil coats the flour.
  2. Add little by little water, knead and make a stiff dough.
  3. Keep the dough aside for 15 minutes
  4. In a heavy bottom pan, heat 1 tbsp oil, cumin seeds, ginger, garlic and saute.
  5. Once the aroma spreads, add green chilly, turmeric, green peas, little water and cover it with a lid and cook.
  6. Add salt, mashed potatoes, garam masala and mix well and cook for couple of minutes.
  7. Add dry mango powder and coriander leaves to finish.
  8. The stuffing for samosa is ready.
  9. Take the dough, sprinkle some dough on the wooden surface, flatten into an oval shape.
  10. Cut the oval in center, take one side, apply water over the edges.
  11. Give it a cone shape as shown in the video. Stuff the filling inside the cone.
  12. Stick one end with the other and fold from behind to form a samosa shape.
  13. Deep fry the samosas in very low flame till they turn golden brown.

Enjoy the hot samosas with ketchup, mint chutneys or as chat.
