Sweet corn soup



Ingredients:

  • Vegetable stock (3 cups)
  • Cream style Sweet corn (250 gms)
  • Beans(30 gms, finely chopped)
  • Carrots(30 gms, finely chopped)
  • Cabbage(30 gms, finely chopped)
  • Salt as per taste
  • Cornflour(2 tbsp) mixed in water

Method:

  1. Heat vegetable stock in a pan.
  2. Add cream style sweet corn, beans, carrots, cabbage, salt and mix well.
  3. Bring it to a boil.
  4. Add cornflour mixed in water till the soup thickens.
  5. Keep mixing till it forms a soupy consistency.

Sweet corn soup is now ready to be served hot. Enjoy!

Hot and sour chicken soup

Hot and sour chicken soup  is delicious and very simple to make. A wonderful chicken soup for this winter.


Ingredients:

  • Chicken stock (2 cups)
  • Shredded carrot (15 gms)
  • Shredded cabbage(15 gms)
  • Shredded capsicum (15 gms)
  • Chicken(30 gms, boiled and shredded)
  • Ginger (1/2 inch, chopped)
  • Salt as per taste
  • Cornflour mixed in water (4 tbsp)
  • Egg (1, beaten)
  • soya sauce(1 tbsp)

Method:

  1. In a bowl, add soya sauce(1 tbsp), vinegar (2 tbsp), green chilly (1, chopped), mix well to form a sauce and keep it aside.
  2. In a wok, add chicken stock, cabbage, carrots, capsicum, ginger, chicken, salt and mix well and bring it to boil.
  3. Add the soya vinegar sauce into it and mix well.
  4. Add Cornflour mixed in water into the wok and mix well. Keep adding till the soup thickens.
  5. Pour the egg and mix at the same time till the egg completely drops into the chicken.

Hot & sour chicken soup is now ready to be served. Serve hot. Enjoy!

Shezwan fried rice recipe



Indo – Chinese recipe, Shezwan fried rice is a vegetarian preparation and is a famous Indian street food.




Ingredients:

Method:

  1. Heat oil in a wok, add garlic cloves, capsicum, cabbage and saute on high flame.
  2. Add Shezwan sauce/Red chilly sauce and saute.
  3. Add long boiled rice and saute so that the vegetables and sauce mixes well.
  4. Add sugar & salt, mix again.

Shezwan fried rice is ready to be served. Enjoy!

Chilly chicken recipe



This Sunday try the Indo – Chinese, Chilly chicken. While you will order this in a restaurant, you might have not made it in your home as it is quite time consuming. However the major task is the preparation and that is something you can do ahead of time.

Shezwan sauce (Red chilly sauce)



Indo – Chinese based dish, Shezwan sauce is used in many dishes such as chilly chicken, Shezwan fried rice, etc.
This is a famous street food in India.




Ingredients:

Dried red chillies ( 50 gms)

Cooking oil (2 tbsp)

Ginger (1/2 inch, chopped)

Garlic (9 cloves, chopped)

Tomato sauce (50 gms)

Water (enough to immerse the dried red chillies)

In a pot, add dried red chillies, water and boil it for 20 minutes.

Bring it to a room temperature and drain away the water.

Grind the cooked red chillies to form a coarse paste.

The Chilly paste is now ready. Keep it aside.

Heat a pan, add oil.

Add ginger & garlic and saute till the garlic turns light golden in color.

Add Chilly paste (2 tbsp) into it and saute for 3 minutes.

Add tomato sauce and saute for 1 minute.

Shezwan Sauce or Red chilly sauce is now ready.

It can be used in Indo – Chinese dishes such as Shezwan fried rice, Gobi Manchurian, Chilly chicken, etc.

Momos Part 3 (Chicken) and Wontons



Momo is a dish from Asian Cuisine and are types of dumpling made of flour and fillings inside it.  The filling could be vegetarian made of all the vegetables or non-vegetarian made of meat.

Momos Part 3 (Chicken) and Wonton demonstrates how to make Chicken Momos and Chicken Wontons.

Chilly Garlic Sauce is a good complement with both.

 

 

Ingredients:

  • Chicken mince (500 gm)
  • Refined flour/ All purpose flour / Maida (250 gm)
  • Garlic chopped (50 gm)
  • Ginger chopped (20 gm)
  • Green chilly chopped (1)
  • Spring onion chopped (10 gm)
  • Coriander root (10 gm)
  • Arromat (20 gm)
  • Crushed black pepper (10 gm)
  • Sesame oil (2 drops)
  • Chinese wine (1/2 tsp)
  • Salt as per taste
  • Oyster sauce ( 1 tsp)
  • Chilly flakes (50 gm)
  • Soya sauce (5 ml)
  • Vinegar (10 ml)

Method:

Momos ( Chicken)

  1. Mix chicken, garlic, ginger, green chilly, spring onion, coriander root, crushed pepper, sesame oil, oyster sauce, Chinese wine, arromat and season with salt.
  2. Make semi hard dough of refined flour with water.
  3. Cut the dough into small pieces and with a Momo rolling pin shape them into thin cercal.
  4. Stuff the mixture of chicken in the thin dough cercal and shape them into different Momo shapes
  5. Cook the Momos in a steamer for about 15 minutes.

Server Momos hot with Chilly Garlic Sauce

Chicken Wontons

  1. Take a spring roll sheet and cut into small square.
  2. Stuff the mixture of chicken that was made for chicken Momo into the spring roll sheet.
  3. Give it a shape of your choice or the shape as shown by the Chef in the video to form a Wonton.
  4. Shallow fry the Wontons in refined oil till golden brown.

Wontons are ready to be served and taste best when served with Chilly Garlic Sauce.

Momos Part 2 (Vegetarian)

Ingredients:

  • All purpose flour/ maida (250 gm)
  • Garlic Chopped (50 gm)
  • Ginger Chopped (20 gm)
  • Cabbage (100 gm)
  • Carrot (50 gm)
  • Baby corn (50 gm)
  • Green chilly (1)
  • Spring onion ( 10 gm)
  • Beans (50 gm)
  • Arromat (20 gm)
  • Crushed black pepper (10 gm)
  • Potato starch (20 gm)
  • Sesame oil (2 drops)
  • Salt as per taste
  • Chilly flakes (50 gm)
  • Tomato ketchup (10 gm)
  • Soya sauce (5 ml)
  • Vinegar (10 ml)

Method:

  1. Heat refined oil(1 tbsp) in a pan, add ginger and garlic. Saute till it cooks.
  2. Add baby corn, green chilly, cabbage, beans and saute.
  3. Season with salt, arromat, sesame oil, Chinese wine and thicken with potato starch.
  4. Make hard dough of refined flour.
  5. Cut the dough into small pieces and with the help of Momo rolling pin, shape them into thin cercal.
  6. Stuff the mixture of vegetables in the tin dough cercal and shape them into different momo shapes.
  7. Steam them in a steamer for about 10 to 12 minutes.

Serve hot momos with Chilly Garlic Sauce.
