Rose milk jelly


Rose milk jelly is a delicious dessert made of milk and jelly.. A quick and easy recipe that you can try out any time for  a perfect meal.




 

Ingredients:

  • Milk (5 cups)
  • Gelatin powder (2 & 1/2 tbsp)
  • Powdered sugar(1/3 cup)
  • Vanila essence( 1 tsp)
  • Rose syrup(1/4 tsp)

Method:
In a mixing bowl, add milk (3/4 cup), gelatin powder and mix well to dissolve. Keep it aside.
In a heavy bottom pan, add remaining milk,powdered sugar, Vanilla essence,Rose syrup and mix well.
Heat it and bring it to a boil. Simmer in slow flame.
Add the gelatin milk and gelatin mix into it and mix well till the gelatin dissolves.
Take it out of the flame and pour it in the shape of the container you want it to be.
I m using a rectangular shaped container, allow it to come to a room temperature and set it.
Refrigerate it for 5-6 hours.
Take it out and the milk jelly will be formed.
Place a dish, and gently tap on the back of the container, the jelly will come out easily.
Decorate it with some sugar rose or sugar strawberry and rose syrup.

Delicious Rose milk jelly is ready to be served at the dinner table .. 🙂

Microwave modak recipe for Ganesh Chaturti

Microwave Modak is a quick to make Modak recipe and would be a perfect dish for this Ganesh Chaturti festival. This is a modified version of the traditional Modak recipe for a Microwave is used for the cooking instead of a traditional gas stove. The recipe remains the same, taste remains the same. Less mess and less time consuming dish,

Serves:  4      Difficulty : Intermediate       Cooking time: 40 min




Ingredients

Jaggery 1 cup
Cardamom powder 1/4 tsp
Grated coconut 2 cup
Rice flour 2 cup
Salt a pinch
Ghee or Clarified Butter 2-3 drops

Method

For the filling:

In a mixing bowl, add jaggery and microwave it for 1 minutes on high power till it melts. Add cardamom powder and mix well. Add grated coconut and mix well. Microwave the jaggery and coconut mixture on high power for 1 & 1/2 minute. In between, give it a nice mix. Allow it the mixture to come to a room temperature.

For dumpling:

In a microwave safe vessel, pour 2 cups water. Add a pinch salt, and 2-3 drops of ghee and mix it. Microwave it for 2 minutes or till the water boils.
Add the rice flour into it and mix it well. Allow the mixture to come to a room temperature. Knead the flour with hand and make a soft dough of it. Make small balls of lemon size of the dough

Assembling

Make the balls into a cup shape. Fill in the cup with the sweet filling and seal the cup. We get a nice sweet dumpling. Place the dumpling in a microwave steamer/idli steamer with water in it, and microwave on high power for 6 minutes or till the dumpling cooks. Allow it to cool before serving.

Delicious microwave modak is ready to be served. Enjoy!

Microwave sweet Kozhikatta recipe



Kozhikatta is a sweet rice dumpling with the filling of coconut and cardamom. It is a delicacy of kerala and made during festivals. Microwave sweet Kozhikatta recipe is made using a microwave without changing the authentic taste and flavor. Its delicious and a wonderful snack.

Ingredients:

  • Rice flour (1 cup)
  • Water (1 cup)
  • Coconut (1 cup)
  • Cardamom powder (a pinch)
  • Salt (1/2 stp)
  • Ghee (3 drops)
  • Sugar (3 tbsp)




Method:

  1. In a microwave safe bowl, pour water, ghee & salt.
  2. Mix well and microwave it for 4 minutes or till the water boils.
  3. Add the rice flour in the hot water and mix well. Aroma of the rice flour will spread.
  4. Allow the mixture to cool and come to room temperature.
  5. Knead the mixture into a soft dough. No water is needed to knead the dough, just knead the dough that is already mixed with water.
  6. To make the filling, In a mixing bowl, add the coconut, sugar and cardamom powder. Mix it well. The filling is ready.
  7. Make small balls of the rice flour dough. Now gently press at the center of the ball and form a bowl shape of the dough.
  8. Fill in the filling in the bowl and seal it and make a ball shape kozhikatta.
  9. In a microwave safe steamer, place the kohizikatta and steam in in a microwave for 6 minutes on high power.
  10. Prick Kohizhikatta with a toothpick to check if it is cooked well. If the tooth pick comes out clean, then Kohizhikatta is cooked well and nice.

Delicious Kozhikatta is now ready to be served once it cools down. Enjoy !

Pink tea cupcakes



Pink tea cupcakes are soft and yummy. they make fantastic tea time snacks.


Ingredients:

  • All purpose flour (1 cup)
  • Cornflour (1/2 cup)
  • Baking powder(1/2 cup)
  • Baking soda(a pinch)
  • Eggs(4)
  • Powdered sugar(1 & 1/4 cup)
  • Vanilla essence (1 tsp)
  • Oil (3/4 cup)
  • Icing sugar(1 & 1/4 cup)
  • Food coloring (rose or pink color, 2 drops)
  • Hot water (2 tbsp)

Method:

  • Pre-heat the oven at 180 degree Celsius for 10 minutes.
  • In a mixing bowl, sift all purpose flour, cornflour, baking powder and baking soda.
  • Sift well and throw away the residue.
  • In another mixing bowl, add eggs, and beat well.
  • Add powdered sugar into it and beat well vigorously for 15 minutes. You can also use an electric beater.
  • Add vanilla essence, oil and mix it gradually
  • Add the sift flour into the mixture and fold in gently so that the air do not escape from the egg and sugar mixture.
  • Line the muffin cups on the muffin tray and pour the batter into it.
  • Fill in 3/4 cup with batter since the batter will rise while baking and will fill the cup.
  • Bake it in a pre-heated over at 180 degree Celsius for 17 minutes or till they are cooked.
  • Once done, check the cup cakes if they are cooked from the inside by inserting a fork or a toothpick. If the toothpick or fork comes out clean, the cup cakes are cooked. Keep the cupcakes aside and will make the icing for the cupcakes.
  • In another bowl, sift the icing sugar, rose color and hot water.
  • Mix well till the mixture becomes smooth. The icing is now ready.
  • With the help of a spread knife, apply and spread the icing on the cupcake.

Delicious yummy pink tea cupcakes are ready to be served for tea time. Enjoy!

Baked french toast



Celebrate this valentine’s day with this special breakfast dish and please your loved ones with this quick and tasty baked french toast.


Ingredients:

  • Cinnamon & raisin bread (8 slices)
  • Eggs (2)
  • Powdered sugar (3 tbsp and some for dusting)
  • Nutella to apply on bread
  • Milk (1/4 cup)
  • Banana (1 ripe, cut into slice)

Method:

  1. French toast taste best with cinnamon and raisin bread. A plain bread can also be used to make this dish.
  2. With the help of a heart shaped cookie cutter, cut the bread and give it a heart shape.
  3. Apply nuttella(1 tbsp) on each heart shape slice.
  4. Stick the two hearts so that a sandwich is formed.
  5. In another bowl, add eggs, sugar, milk and beat it well so that the sugar dissolves in the mixture.
  6. Dip the nutella heart shaped sandwich and place it on a baking tray.
  7. Dip the banana in powdered sugar and place it on the baking tray along with the bread.
  8. The sugar in the banana will caramelize and will give a beautiful color and taste to the dish.
  9. Bake it in a pre-heated oven at 180 degree Celsius for 12 minutes. The baked french toast is ready.

Assembling:

  • In a dish, place the baked french toast, dust some powdered sugar and place the caramelized banana on the top.

Lauki ka halwa (microwave recipe)


Lauki ka halwa/Dudhi halwa or Bottle Gourd dessert recipe is a microwave recipe, It is a different version of the recipe than the original recipe as it is made in microwave. It tastes the same and is less time consuming and no mess while cooking.

Ingredients:

  • Bottle gourd/ Lauki ( skin pealed and grated, 1/2 cup after squeezing of water)
  • Sugar (1/8 cup or as per your sweetness)
  • Milk (1/4 cup)
  • Ghee (1 tbsp)
  • Almonds (4)
  • Cashew nut (6)
  • Raisins (6)
  • Green cardamom (a pinch)

Method:

  1. Grate the bottle gourd and squeezed the water from it.
  2. Use the water for other cooking purposes as it contains lot of vitamins in it.
  3. Separate the grated bottle gourd from water and keep it aside.
  4. In a microwave safe bowl, add the bottle gourd, sugar, milk and mix well.
  5. Wrap it in a cling film and microwave it for 5 minutes on high power.
  6. Remove the cling film and mix well.
  7. Add ghee and microwave it for 1 & 1/2 minutes uncovered.
  8. Garnish it with dry fruits like almonds , cashew nuts , green cardamom powder, raisins  and mix them well.

Delicious lauki ka halwa is now ready to be served chilled. Enjoy!

Coconut barfi (microwave recipe)


Easy to make coconut barfi is a quick dessert recipe made of coconut in microwave.


Ingredients:

  •  Coconut (freshly grated, 1 cup)
  • Condensed milk (1/4 cup)
  • Food color (optional)

Method:

  1.  In a microwave safe tray, spread the freshly grated coconut and microwave for 2 minutes on high powder.
  2. Take it off the microwave and mix well. Spread it again and microwave it for another 2 minutes.
  3. The coconut has dry roasted and the aroma of the coconut will start to spread.
  4. In a mixing bowl, add the roasted coconut, condensed milk and mix well.
  5. Divide the mixture in to parts. Separate one portion of mixture in a separate bowl.
  6. Pour few drops of food color on one portion.
  7. Spread the mixture without color on a flat dish. On the top, spread the mixture with color.
  8. Refrigerate it for 1 hour.
  9. Once it cools down, cut into small pieces to make small burfi.

Quick and easy to make coconut barfi is now ready to be served. Enjoy!
