Spaghetti Mushroom with Cream Sauce



Spaghetti Mushroom with Cream Sauce is an Italian dish and is made of cream and mushrooms in spaghetti
& is yummy to taste. The Ingredients and Measurement and given below the video.

Ingredients:

  • Fresh cream (2 cups)
  • Nutmeg powder (a pinch)
  • Onion (1/2 chopped)
  • Spaghetti (200 gms)
  • Button mushrooms (150 gms)
  • Oil (1tbsp)

Method:

To make Cream Sauce

  • Heat oil in a pan, add onion and saute till it turns translucent.
  • Add the fresh cream, nutmeg powder, salt and mix again.
  • Reduce the cream in a slow flame into a sauce like consistency.
  • Drain and separate the onion from the cream.

Cream sauce is ready and keep it aside.

To make the spaghetti

  • Fill water in a heavy bottom pan so that the spaghetti dips completely into it.
  • Add salt (1 tbsp) and oil (1 tsp) and bring the water to a boil.
  • Add the spaghetti in it and cook for about 8 to 9 minutes or as per the instruction give on the packet.
  • Once the spaghetti cooks, strain the water and add oil (1 tsp) so that they do not stick to one another.

To make Spaghetti Mushroom Cream Sauce

  1. Heat oil(1 tbsp) in a pan, onion (1/2, chopped), mushrooms, salt and saute till the mushrooms are cooked.
  2. Add little white wine(10 ml) (optional)*
  3. Add the  reduced cream sauce and mix well so that the mushroom flavor mixes with the cream.
  4. Add the boiled Spaghetti and mix well.

Steaming hot Spaghetti Mushroom with Cream Sauce is ready to be served.

Ingredients:

  • Button Mushrooms (100 gm)
  • Cream (350 ml)
  • garlic (30 gm)
  • White wine(20 ml)
  • Parmesan Cheese (20 gm)
  • Thyme leaves (2)
  • Olive oil (25 ml)
  • Salt as per taste
  • Black pepper corn (crushed, 1/2 tsp)
  • Basil leaves (2)

Method:

  1. Heat olive oil in a sauce pan. Saute garlic, mushrooms, thyme leaves, white wine and cook.
  2. Add cream and shimmer for 3 minutes to get the flavors infused in cream.
  3. Switch off the flame, add Parmesan cheese, salt and pepper, basil leaves.

Mushroom Cream Sauce is ready to be served with Pasta or Sea food.

Garlic Saute Shrimp with Butter Sauce


Garlic Saute Shrimp with Butter Sauce  is an Italian dish. Easy to make recipe and is an excellent starter.

Italian cuisine  is simple to make. We do not need special vessel or equipment to make an Italian cuisine.

Ingredients:

  • Shrimp/Prawns (200 gms)
  • Galic (5 cloves, sliced)
  • Basil leaves (3-4)
  • Butter (50 gms)
  • Lemon juice of half lemon
  • Salt as per taste
  • Oil (1 tbsp)
  • Vegetable stock/water (1/2 cup)
Method:
  1. Heat oil in a pan, add garlic and saute till it changes color.
  2. Add the prawns/shrimp in it and saute till they turn pink in color.
  3. Add stock, lime juice, salt and saute well.
  4. Add butter and switch off the flame and mix them well till the butter melts.
  5. Tear the basil leaves and add it to the shrimp/prawn and mix again.
  6. Garnish it with basil leaves.
Garlic Saute Shrimp with Butter Sauce  is ready to be served hot.

Shrimp & Tomato Risotto


Shrimp & Tomato Risotto is an Italian dish. A Risotto is an Italian rice preparation and can be made of vegetable, meat, sea food.

I have made the Risotto with Prawn or Shrimp,tomato and rice. It has a prominent flavour of cheese and butter and tomato. This recipe is very simple to make.

Ingredients and measurements are mentioned below the video.

 

Ingredients:

  • Shrimps/Prawns (200 gms)
  • Parmesan Cheese (30 gms, shredded)
  • Butter (20 gms)
  • Short grain Arborio rice
  • Tomatoes (blanched & chopped)
  • Oil (1 tbsp)
  • Onion (1, chopped)
  • Basil leaves (4)
  • Salt as per taste

Method

  1. Take water in a bowl, add tomatoes and boil for 3 minutes. Take the tomatoes, peal its skin and chop them. Keep the remaining water or the stock aside.
  2. Heat oil in a pan, add onion and saute well.
  3. Once the onion turns translucent, add the rice and saute till it turns transparent.  This process takes about 2 minutes.
  4. Add the tomato stock (1 cup) and mix well till the water evaporates. Add more water and follow the same process till the rice is cooked.
  5. When the rice is half cooked, add salt and blanched tomatoes and cook further.
  6. Add the shrimps or prawns into the rice  6 minutes before the rice cooks.
  7. Keep stirring the rice so that the risotto becomes creamy.
  8. The rice should be cooked to the bite, ie. it should not be over cooked.
  9. After 20 minutes, when the rice is cooked, add the basil leaves, butter and Parmesan and mix well.
  10. Shrimp & Tomato Risotto is ready.

Take it in a plate, garnish with basil leaves and Parmesan cheese and serve hot.

Pizza & Stuffed Pizza



The hardest thing on earth for a mother is making her kid get up early in the morning and the other difficult part is making her kid EAT mainly vegetables!

Well, keeping this in mind I have a good news for every mother. This time I have with me the most delicious and most spicy nutrious Italian delicay ‘Pizza’. In this video post, will see how to prepare Mediterranean Vegetable Pizza, Grilled Tomatoe, Zucchini & Bell Pepper(You can add vege of your own choice) and not only this you can also make the Pizza Bread at home!

Ingredients:

  • All purpose Flour / Maida (250 gm)
  • Egg (1)
  • Water (15 ml)
  • Vegetables of your choice (Sliced  and grilled)
  • Basil leaves ( 5 to 7)
  • Cheese
  • Yeast (1/2 tsp)
  • Tomato sauce
  • Olive oil
  • Salt (1/2)
  • Pepper
  • Oregano
  • Sugar (1/2 tsp)

Method:

To make grilled vegetables

  1. Slice vegetables of your choice and grill them with salt, pepper and oregano.

To make Pizza Bread/Base

  1. Take the all purpose flour/maida, add yeast, salt, sugar, 1/2 egg, water and mix well and make a stiff dough.
  2. While making the dough, it must be continuously knead for about 20 minutes to make it soft and keep it aside for sometime to allow the dough to rest for another 20 minutes.
  3. Now dust some flour on a flat surface, take the kneaded dough and flatten it.
  4. Poke it with a fork throughout the flat dough so that the pizza bread do not raise while it is baked.
  5. Now bake the bread for about 4 minutes in the oven, turn the bread and cook it for another 3 minutes.

Pizza base is ready.

To make Pizza

  1. Spread the tomato sauce all over the pizza and spread some cheese over the next layer.
  2. Add the grilled vegetables over it. Season it with Oregano, salt, chilly flakes basil leaves and olive oil.
  3. Heat the pizza in the oven for 5 minutes. The cheese in it will be melted and all the mixture will be  cooked and nice.
  4. Cut the Pizza into 4.
  5. Pizza is ready to be served.

To make a Stuffed Pizza

  1. Take the kneaded dough and flatten.
  2. Chop the grilled vegetables and keep it in the center of the pizza . Add tomato sauce, oregano and cheese.
  3. Apply egg over the edges to seal. Now seal the pizza along the egg layer.
  4. Take the fork and press the edges to close the filling.
  5. Heat the stuffed pizza in the oven for about 8 minutes, 4 minutes each side.
  6. Once cooked, remove it and apply some olive oil and garnish it with basil leaf.

Stuffed pizza is ready and can be served along with chilly flakes and oregano.

Note: Refer the video recipe for accurate direction  to make pizza base and pizza.

Chilly Garlic Sauce

Arabiatta Sauce



Arabiatta Sauce is an Italian sauce and is made of tomatoes and chilly flakes.It is a best complement with Pasta.

 

Ingredients:

  • Tomatoes (500 gm)
  • Tomato puree (10 gm)
  • Garlic (40 gm)
  • Olive oil (30 ml)
  • Chilly flakes (1 tsp)
  • Crushed black pepper (1 tsp)
  • Salt as per taste
  • Basil leves (3 – 4 )
  • Oregano (1 tsp)

Method:

  1. Blanch tomatoes, remove the skin, seeds and chop it coarsely.
  2. Heat olive oil in a sauce pan, add garlic, chopped tomatoes, tomato puree, oregano and cook it for 30 minutes.
  3. Add chilly flakes, black pepper, salt and finish it with basil leaves.

Arabiata sauce is ready to be served as a complement with Pasta.
