Basic Makhni Gravy


How to make Makhani gravy. Probably the most popular gravy in Indian cooking used as a base for Butter chicken, Paneer tawa masala and other delicacies


Ingredients:

  • Tomatoes (10, cut into halves)
  • Ginger garlic paste (2 tsp))
  • Cloves(4)
  • Red chilli powder(1 tsp)
  • Butter (1 tbsp)
  • Cream (100 ml)
  • Green cardamom pods(4)
  • Salt (1 tsp)
  • Kasuri methi (a pinch, powdered)

Method:

  1. In a heavy bottom pan, add water (1 cup) and bring it to a boil.
  2. Add ginger garlic paste, green chillies, cloves, red chilli powder, green cardamom pods and mix.
  3. Reduce it to sauce like consistency over low heat.
  4. Simmer it till it becomes thick.
  5. After 15 mintues, tomatoes will be cooked. Strain the sauce with a strainer untill the seed and skin is left in the strainer.
  6. Throw away this residue.
  7. Pour the strained puree back into the pan and cook it for 2 minutes.
  8. After 2 minutes, once the gravy comes to a boil, add butter, cream and mix well.
  9. Once the gravy starts to thicken, add the powdered kasuri methi about a pinch to give it a nice aroma.
  10. Cook it for another minute and switch off the flame.
  11. Makhni gravy is now ready. Swith off the flame.

Pour it in a bowl and keep it aside for making various dishes.
this dish is the basic makhani gravy used in Indian cooking.

Hot and sour chicken soup

Hot and sour chicken soup  is delicious and very simple to make. A wonderful chicken soup for this winter.


Ingredients:

  • Chicken stock (2 cups)
  • Shredded carrot (15 gms)
  • Shredded cabbage(15 gms)
  • Shredded capsicum (15 gms)
  • Chicken(30 gms, boiled and shredded)
  • Ginger (1/2 inch, chopped)
  • Salt as per taste
  • Cornflour mixed in water (4 tbsp)
  • Egg (1, beaten)
  • soya sauce(1 tbsp)

Method:

  1. In a bowl, add soya sauce(1 tbsp), vinegar (2 tbsp), green chilly (1, chopped), mix well to form a sauce and keep it aside.
  2. In a wok, add chicken stock, cabbage, carrots, capsicum, ginger, chicken, salt and mix well and bring it to boil.
  3. Add the soya vinegar sauce into it and mix well.
  4. Add Cornflour mixed in water into the wok and mix well. Keep adding till the soup thickens.
  5. Pour the egg and mix at the same time till the egg completely drops into the chicken.

Hot & sour chicken soup is now ready to be served. Serve hot. Enjoy!

Shezwan fried rice recipe



Indo – Chinese recipe, Shezwan fried rice is a vegetarian preparation and is a famous Indian street food.




Ingredients:

Method:

  1. Heat oil in a wok, add garlic cloves, capsicum, cabbage and saute on high flame.
  2. Add Shezwan sauce/Red chilly sauce and saute.
  3. Add long boiled rice and saute so that the vegetables and sauce mixes well.
  4. Add sugar & salt, mix again.

Shezwan fried rice is ready to be served. Enjoy!

Garden fresh salad



Garden fresh salad is loaded with vegetables, high in fiber and good on your diet.



Ingredients:

  • Onion(3, diced)
  • Tomatoes(4, wedges)
  • French beans (long cut, 150 gms)
  • Baby potatoes (8 to 9)
  • Lime juice (1 tbsp)
  • Olive oil (2 tbsp)

Method:

For vegetables:

  1. Fill a vessel with water, add salt (1/2 tbsp) and bring it to boil.
  2. Add the french beans into it and cook them till tender.
  3. Drain away the water and add the french beans in ice cold water so as to retain its green color.
  4. Drain away the water from the french beans and keep it aside.
  5. Fill a vessel with water, add salt (1/2 tbsp) and bring it to boil.
  6. Add the baby potatoes into it and cook them till tender.
  7. Drain away the water from the potatoes.
  8. Cut the potatoes in halves.

Dressing:

In a bowl, add freshly squeezed lime juice, olive oil and mix them well. Dressing for the salad is ready keep it aside.

Assembling:

In a bowl, add the salad dressing, baby potatoes, french beans, onion diced, tomato wedges and mix them well.

Garden fresh salad is now ready. Serve fresh. Enjoy!

Romesco Sauce



Romesco Sauce is a Spanich sauce and is a wonderful combination with seafood or pasta.

Ingredients:

  • Red bell peppers/ Shimla mirch (500 gm)
  • Almonds (50 gm)
  • Pine nuts (20 gm)
  • Olive oil (50 gm)
  • Roasted garlic (50 gm)
  • Red wine vinegar (30 ml)
  • Salt as per taste
  • Black pepper (1 tsp)
  • Sugar (1/2 tsp)

Method:

  1. Roast red  bell peppers/shimla mirch on the flame  and remove its skin at room temperature.
  2. Roast the garlic till it turns light golden color.
  3. Soak almonds and peal of its skin.
  4. In a bowl, add roasted bell pepper, roasted garlic, almonds, olive oil and blend them in a blender to form a fine paste.
  5. Heat olive oil in a pan, add the roasted garlic, red wine vinegar and the paste in to it and keep it in  flame for about 2 minutes.

Romesco Sauce is ready to be served hot or cold with seafood or pasta.

Mushroom Cream Sauce



Mushroom Cream Sauce is an Italian sauce and is best served with Pastas and Sea foods.

Ingredients:

  • Button Mushrooms (100 gm)
  • Cream (350 ml)
  • garlic (30 gm)
  • White wine(20 ml)
  • Parmesan Cheese (20 gm)
  • Thyme leaves (2)
  • Olive oil (25 ml)
  • Salt as per taste
  • Black pepper corn (crushed, 1/2 tsp)
  • Basil leaves (2)

Method:

  1. Heat olive oil in a sauce pan. Saute garlic, mushrooms, thyme leaves, white wine and cook.
  2. Add cream and shimmer for 3 minutes to get the flavors infused in cream.
  3. Switch off the flame, add Parmesan cheese, salt and pepper, basil leaves.

Mushroom Cream Sauce is ready to be served with Pasta or Sea food.

Chicken Satay with Peanut Sauce recipe


Chicken Satay is a Thai Cuisine. It is made of marinated, skewered and grilled chicken with various spicy seasonings. Turmeric is an essential ingredient in marination.Satay is served with a sweet and spicy peanut sauce dip.

Below video demonstrates how to make Chicken Satay with the dip Peanut Sauce. Ingredients and its measurements are written below the video.

 

Ingredients:

  • Chicken breast (200 gm)
  • Lemon grass (100 gm)
  • Galangal (60 gm)
  • Coriander powder (1 tsp)
  • Cumin/Jeera powder (1 tsp)
  • Turmeric powder (1/2 tsp)
  • Fish sauce (1 tsp)
  • Oyster sauce (1 tsp)
  • Crushed peanuts(150 gm)
  • Red curry paste (50 gm)
  • Coconut milk (200 ml)
  • Sugar (1 tsp)
  • Satay sticks (7 no.)
  • Makrut (1/2 tsp)

Method:

To make a peanut sauce

  1. Saute the red curry paste in oil, add coconut milk and cook.
  2. Add crushed peanut, sugar, salt and mix well.

Peanut sauce is ready.

To make Chicken Satay

  1. Cut the chicken breast into thick strips.
  2. Blend the lemon grass, galangal, makrut into fine paste and add  it to the chicken.
  3. Add coriander powder, jeera/cumin powder, oyster sauce, fish sauce and mix well.
  4. Keep this marinated chicken for 1/2 hour.
  5. Skewer the marinated chicken with satay stick.
  6. Grease the pan with oil and grill the chicken till they are cooked.

Chicken Satay is ready to be served with peanut sauce.
