Masala Kulipaniyaram – Ganpathi festival recipe

Masala paniyaram is made of left over idli dosa batter. A special pan called paniyaram pan is used. Traditionally, this pan was made of iron. I have seen it my grand mother use it to make unni appam.
Now in modern times, we get them as non stick pan where little oil is required to cook.

Ingredients:

  1. Idli dosa batter (1 cups)
  2. Onion (1, chopped)
  3. Curry leaves (few, chopped)
  4. Grated coconut (1 tbsp)
  5. Asofotida powder (a pinch)
  6. Ground black pepper (a pinch)
  7. Chilly powder (1/2 tsp)
  8. Green chilly(1/2 chopped)
  9. Oil for cooking.
  10. Salt as per taste.

Method:

  • In a vessel, add the idli dosa batter, onion, curry leaves, grated coconut asofotieda powder, ground black pepper.
  • If you want it to be spicy, add green chilly and red chilly powder into the batter.
  • Add salt if required since idli dosa batter will already have salt in it.
  • Mix all the ingredients well.
  • Take a kulipaniaram pan, heat it, add very little oil in each holes of the pan.
  • Pour in the batter and cook it on one side.
  • Turn the other side and cook it the other side as well.

Delicious and crispy Masala paniyaram is ready t be served!

Papadum is a crispy side dish served with Indian meals. Usually it is deep fried. If not, it is roasted on a tava or pan. Here is another quick method to roast papadum. Also, it is an oil free snack.

Serves:  4      Difficulty : Easy       Cooking time: 1 minute




Ingredients

Method

Take a microwave safe dish. Place the raw papadum in microwave for 30 seconds on high power
Take it out and allow it to cool.
Crispy, oil free papadum is ready to be served with meals.

Baked Shankarpali

Enjoy this diwali with an oil free, no deep fry recipe. Baked Shankarpali is baked instead of deep fried. Happy Diwali

Serves:  4      Difficulty : Easy       Cooking time: 30 min




Ingredients

Sugar 1/2 cup
Milk 1/2 cup
Ghee/clarified butter 1/4 cup
Maida/All purpose flour 2 1/2 cup

Method

Pre-heat the oven at 180 Degree Celsius for 10 minutes.

In a mixing bowl, add sugar, milk and stir it till the sugar dissolves. Add ghee and continue mixing. Add maida or refined flour, mix well and knead it well with hands.

Make large balls of the dough. Flatten it on a flat surface and cut them into diamond shape with knife or a cutter.

Bake it at 180 degree Celsius for 10 -15 minutes or till it turns nice golden brown in color.

Baked shankarpali for diwali is now ready to be served. Enjoy!

Microwave popcorn recipe



You might have tried the how to make popcorn. Here is another method to make one using a microwave.  Popcorn recipe using microwave





Ingredients:

Oil (1 tsp
Salt (1/2 tsp)
Dried corn (2 tbsp)

Method:
In a microwave safe dish, add oil, salt and dried corn.
Mix it well and close it with a microwave safe lid and microwave it for 5 minutes on high power.
The popcorn will pop up. The remaing ones which has not popped, keep it back in the microwave and microwave it for 5 minutes on high power.
The one that is ready and popped, take it out in a bowl.
Sprinkle some salt over it and enjoy it with your favorite movie or match 🙂

Microwave potato chips(oil-free recipe)


A very quick and great for your health recipe with no oil. A guilt free recipe, Microwave potato chips(oil-free recipe).





Ingredients:

  • Potato(1, cut into thin slices)
  • Salt to taste

Method:

  1. In a microwave safe dish, place all the potatoes without overlapping it.
  2. Microwave it on high power for 6 minutes.
  3. Turn the chips the other side and microwave it for another 10 minutes on high power.
  4. Sprinkle some salt over the top.
  5. Allow it to cool before serving.

Savory cookie for kids tifin box



Savory cookie is made of whole wheat flour and bengal gram flour. This is not a sweet cookie. This is very good for your health as well as kids health. It is a wonderful tea time snack and a kids snacks box idea

Ingredients:

  • Whole wheat flour (1/2 cup)
  • Bengal gram flour (1/2 cup
  • Salt (1/2 tsp)
  • Turmeric powder (1/4 tsp)
  • Cumin seeds (1/2 tsp)
  • Asafoetida powder(1/4 tsp)
  • Butter (1 tbsp)
  • Water to make a soft dough

Method:

  • In a mixing bowl, add whole wheat flour, bengal gram flour, salt, turmeric cumin seeds,
    asaofetida powder, butter and mix well.
  • Add little by little water to make a soft dough.
  • On a wooden surface, dust some whole wheat flour, and coat the dough.Flatten it with a rolling pin.
  • Use your or your kid’s favourite cookie cutter shape to shape it into different size. If you do
    not have a cookie cutter, you can use a small lid of a tin to give a round shape.
  • Place the shape on a greased baking tray.Bake it at 180 Degree Celcius in a pre heated
    oven for 10 minutes.
  • Remove it from the oven and bring it to room temperature.

Crunchy and healthy savory cookie is now ready to be served as a tea time snack or for kids
tiffin. Enjoy!

Baked french toast



Celebrate this valentine’s day with this special breakfast dish and please your loved ones with this quick and tasty baked french toast.


Ingredients:

  • Cinnamon & raisin bread (8 slices)
  • Eggs (2)
  • Powdered sugar (3 tbsp and some for dusting)
  • Nutella to apply on bread
  • Milk (1/4 cup)
  • Banana (1 ripe, cut into slice)

Method:

  1. French toast taste best with cinnamon and raisin bread. A plain bread can also be used to make this dish.
  2. With the help of a heart shaped cookie cutter, cut the bread and give it a heart shape.
  3. Apply nuttella(1 tbsp) on each heart shape slice.
  4. Stick the two hearts so that a sandwich is formed.
  5. In another bowl, add eggs, sugar, milk and beat it well so that the sugar dissolves in the mixture.
  6. Dip the nutella heart shaped sandwich and place it on a baking tray.
  7. Dip the banana in powdered sugar and place it on the baking tray along with the bread.
  8. The sugar in the banana will caramelize and will give a beautiful color and taste to the dish.
  9. Bake it in a pre-heated oven at 180 degree Celsius for 12 minutes. The baked french toast is ready.

Assembling:

  • In a dish, place the baked french toast, dust some powdered sugar and place the caramelized banana on the top.

Serve it with love to your loved ones. Enjoy!
