Carrot and lentil soup

Ingredients:

  • Carrot (1, sliced)
  • Lentils/ Broken Green gram dal/broken moong daal(1/2 cup, Half cooked)
  • Clarified Butter/Ghee(1 tsp)
  • Onion(1/2 chopped)
  • Garlic (3 cloves, chopped)
  • Vegetable stock/Lentil stock (3 cups)
  • Salt(1 tsp or as per taste)

Method:

  1. In a pan add clarified butter. After it is hot add onion, garlic , carrot and saute it for a while.
  2. Add the half cooked lentils to the carrot.
  3. Add around 3 cups of stock. As I am making a broth, you can add a bit more of the stock if you want. Add seasoning as per your taste or if you want to skip adding salt for your kids meals, you may avoid salt completely.
  4. Allow the lentils and carrot to cook and once it is cooked and tender to touch.
  5. Switch off the flame. If you want you may add some herbs to enhance the flavour , but kids dont understand complex flavours and might stop eating the soup completely. So best is to keep it simple and slowly introduce various tastes to the meals.

Carrot & lentil soup is now ready. Serve it in a bowl and allow to cool a bit before serving.

Tomato soup recipe


A simple recipe for Roasted tomato soup when you dont have the time for a elaborate dish. Kids will love it and you can be confident of the health benefits for your loved ones.

Tomato contains  vitamins A, C and E, potassium & mineral salt. This recipe will benefit kids in many nutritious ways

        

Ingredients:

  • Tomatoes( 5, halves)
  • Garlic (sliced, 3 cloves)
  • Salt (1 tsp or as per taste)

Method:

  1. Cut the tomatoes in halves and place them on a baking tray.
  2. Add sliced garlic and microwave it for 10.
  3. Remove from the microwave, and allow it to cool. Peal of its skin and blend them in a blender to make a smooth puree.
  4. Heat a pan, add the tomato puree & bringit to a boil.
  5. Add salt as per taste.
  6. Once it come to a boil, add the cream sauce and mix well.
  7. Continue stirring for couple of minutes and then switch off the flame.
  8. Strain the the puree with the help of a strainer. Seperate the tomato seeds from the soup with the strainer and discard them.

Delicious tomato soup is now ready to be served when warm.

Spinach Soup


This easy to make Spinach soup is kid friendly & has has many essential vitamins and fiber and adding it to a regular diet has lots of health benefits.

          

Ingredients:

  • Spinach leaves (200 gms)
  • Galic (3 cloves, sliced)
  • Butter (1 tbsp)
  • Water (1/2 cup)
  • Cornstarch (1 tsp) in milk (3 tsp)

Method:

  1. Take  spinach leaves, wash them and cut them. Place it in a bowl & microwave for 2 mintues.
  2. In a pan, add butter, garlic and fry them. Saute will it turns golden brown in color.
  3. Add the microwaved spinach & saute for 1 minutes.
  4. Add salt as per your taste. You can avoid salt for very little baby.
  5. Switch off the flame and puree the mixture in a blender.
  6. After pureeing it, switch on the flame and bring it to a boil.
  7. Add 1/2 cup water to it to form a soup like consistency.
  8. Add thickening if the soup becomes watery.
  9. Here I m adding cornstarch in milk as thickening.

There our delicious spinach soup is now ready to be served. Serve the spinach soup when warm.

Sweet corn soup



Ingredients:

  • Vegetable stock (3 cups)
  • Cream style Sweet corn (250 gms)
  • Beans(30 gms, finely chopped)
  • Carrots(30 gms, finely chopped)
  • Cabbage(30 gms, finely chopped)
  • Salt as per taste
  • Cornflour(2 tbsp) mixed in water

Method:

  1. Heat vegetable stock in a pan.
  2. Add cream style sweet corn, beans, carrots, cabbage, salt and mix well.
  3. Bring it to a boil.
  4. Add cornflour mixed in water till the soup thickens.
  5. Keep mixing till it forms a soupy consistency.

Sweet corn soup is now ready to be served hot. Enjoy!

Hot and sour chicken soup

Hot and sour chicken soup  is delicious and very simple to make. A wonderful chicken soup for this winter.


Ingredients:

  • Chicken stock (2 cups)
  • Shredded carrot (15 gms)
  • Shredded cabbage(15 gms)
  • Shredded capsicum (15 gms)
  • Chicken(30 gms, boiled and shredded)
  • Ginger (1/2 inch, chopped)
  • Salt as per taste
  • Cornflour mixed in water (4 tbsp)
  • Egg (1, beaten)
  • soya sauce(1 tbsp)

Method:

  1. In a bowl, add soya sauce(1 tbsp), vinegar (2 tbsp), green chilly (1, chopped), mix well to form a sauce and keep it aside.
  2. In a wok, add chicken stock, cabbage, carrots, capsicum, ginger, chicken, salt and mix well and bring it to boil.
  3. Add the soya vinegar sauce into it and mix well.
  4. Add Cornflour mixed in water into the wok and mix well. Keep adding till the soup thickens.
  5. Pour the egg and mix at the same time till the egg completely drops into the chicken.

Hot & sour chicken soup is now ready to be served. Serve hot. Enjoy!

Pumpkin Soup – Vegetarian Thanksgiving recipe



Thanksgiving Day is family festival celebrated in US, Canada & other countries. This day is also called as Turkey day.

Pumpkin Soup – Vegetarian Thanksgiving recipe,  is a delicious and flavorful soup and is served with toast or grilled bread.

Ingredients:

  • Pumpkin (400 gms)
  • Potatoes (2, small size)
  • Tomatoes (125 gms , blanched)
  • Fennel seeds (1 tsp, powdered)
  • Vegetable stock (350 ml)
  • Salt as per taste
  • Garlic (2, skin pealed)

Method:

  1. Peal the skin and deseed the pumpkin and cut into 2 cm thickness.
  2. Peal the skin of potatoes and cut into 2 cm thickness.
  3. Heat a pan, add pumpkin, potatoes, blanched tomatoes, garlic, fennel seeds powder, salt and cover it with vegetable stock till the pumpkin dips in the stock.
  4. Bring it to boil and shimmer it for 30 minutes till the vegetables become cooked & tender.
  5. Separate the cooked vegetables from the stock and blend in a blender adding little by little of the stock to a soup consistency.
  6. After blending, return the puree back to the pan and shimmer it for another 2-3 minutes.
  7. Garnish the Pumpkin soup with grilled bread.

Pumpkin soup is ready to be served.

Lemon Rasam

Ingredients:

  • Lemon
  • Green Chilly
  • Ginger
  • Tomatoes
  • Tur Dal
  • Curry leaves
  • Coriander Leaves
  • Turmeric powder
  • Asafetida powder
  • Pepper powder
  • Jeera powder / Cumin Seed powder

Method:

  1. Cut green chilly, ground ginger, chop tomatoes in a cooking bowl. Add turmeric powder and water and keep it for boil.
  2. Boil Tur Dal, make it a paste and blend it with water.
  3. When the tomatoes are cooked, add the Tur dal water to it.
  4. Add Asafetida powder, pepper powder, jeera powder / cumin seed powder and mix well.
  5. Switch of the flame, add coriander leaves and curry leaves to the rasam. Let the rasam cool for sometime.
  6. Squeze lemon to it.

Lemon rasam is ready to be served with steam rice.
