Microwave sweet Kozhikatta recipe



Kozhikatta is a sweet rice dumpling with the filling of coconut and cardamom. It is a delicacy of kerala and made during festivals. Microwave sweet Kozhikatta recipe is made using a microwave without changing the authentic taste and flavor. Its delicious and a wonderful snack.

Ingredients:

  • Rice flour (1 cup)
  • Water (1 cup)
  • Coconut (1 cup)
  • Cardamom powder (a pinch)
  • Salt (1/2 stp)
  • Ghee (3 drops)
  • Sugar (3 tbsp)




Method:

  1. In a microwave safe bowl, pour water, ghee & salt.
  2. Mix well and microwave it for 4 minutes or till the water boils.
  3. Add the rice flour in the hot water and mix well. Aroma of the rice flour will spread.
  4. Allow the mixture to cool and come to room temperature.
  5. Knead the mixture into a soft dough. No water is needed to knead the dough, just knead the dough that is already mixed with water.
  6. To make the filling, In a mixing bowl, add the coconut, sugar and cardamom powder. Mix it well. The filling is ready.
  7. Make small balls of the rice flour dough. Now gently press at the center of the ball and form a bowl shape of the dough.
  8. Fill in the filling in the bowl and seal it and make a ball shape kozhikatta.
  9. In a microwave safe steamer, place the kohizikatta and steam in in a microwave for 6 minutes on high power.
  10. Prick Kohizhikatta with a toothpick to check if it is cooked well. If the tooth pick comes out clean, then Kohizhikatta is cooked well and nice.

Delicious Kozhikatta is now ready to be served once it cools down. Enjoy !

Baked french toast



Celebrate this valentine’s day with this special breakfast dish and please your loved ones with this quick and tasty baked french toast.


Ingredients:

  • Cinnamon & raisin bread (8 slices)
  • Eggs (2)
  • Powdered sugar (3 tbsp and some for dusting)
  • Nutella to apply on bread
  • Milk (1/4 cup)
  • Banana (1 ripe, cut into slice)

Method:

  1. French toast taste best with cinnamon and raisin bread. A plain bread can also be used to make this dish.
  2. With the help of a heart shaped cookie cutter, cut the bread and give it a heart shape.
  3. Apply nuttella(1 tbsp) on each heart shape slice.
  4. Stick the two hearts so that a sandwich is formed.
  5. In another bowl, add eggs, sugar, milk and beat it well so that the sugar dissolves in the mixture.
  6. Dip the nutella heart shaped sandwich and place it on a baking tray.
  7. Dip the banana in powdered sugar and place it on the baking tray along with the bread.
  8. The sugar in the banana will caramelize and will give a beautiful color and taste to the dish.
  9. Bake it in a pre-heated oven at 180 degree Celsius for 12 minutes. The baked french toast is ready.

Assembling:

  • In a dish, place the baked french toast, dust some powdered sugar and place the caramelized banana on the top.

Pal poli – A recipe for Ganesh Chaturti



Pal poli is a very tasty sweetmeat which can be served for Ganesh Chaturthi. It is not a very common dish so you can surprise your guests with this easy to make dish.

    

Ingredients:

  • Semolina (1 cup)
  • ghee (4 tbsp)
  • All purpose flour/Maida (1 cup)
  • Milk (2 cups)
  • Saffron (a pinch)
  • Condensed milk (2 tbsp)
  • Oil to deep fry
  • Almonds (few chopped, for garnish)

Method:

  1. In a mixing bowl, add semolina, ghee(2 tbsp) and mix well.
  2. Add refined flour or maida and mix it well.
  3. After mixing it well, add little by little water and make a stiff dough. Knead it and allow it to rest for 15 minutes.
  4. While our dough is resting, let us get our saffron milk ready.
  5. For that heat a pan, add milk & bring it to a boil.
  6. In a separate small bowl, add a pinch of saffron, add 1 tsp of water and soak it for 5 minutes. This will make the saffron soft.
  7. Once the milk comes to a boil, reduce the flame and stir it for 5 minutes so as to get a creamy texture.
  8. Add the soaked saffron into the milk and continue cooking in slow flame. The milk will change its color and the delicious aroma of saffron will spread.
  9. After 1 minute, add the condensed milk and continue stirring.
  10. In case you do not have condensed milk, you can substitute it with sugar.
  11. Continue stirring for another 2 minutes or till the creamy consistency of the saffron milk is reached.
  12. Switch off the flame and keep it aside.
  13. Take the dough that is being resting for 15 minutes, and make small balls out of it.
  14. Place a ball on a flat surface, with the help of a rolling pin, flatten it and roll it thin.
  15. Once flattened, take few drops of ghee and spread it evenly on the surface.
  16. Now fold the poli into half, press gently and apply few drops of ghee on the upper surface.
  17. Now fold it from the other side. It will have a triangular shape.
  18. Now with the help of a rolling pin, roll it once again, flatten it and make it thin poli. Now the poli has
  19. got beautiful layer as it is stuffed with ghee.
  20. Prick the polis with a fork or knife so that it doesn’t rise.
  21. Heat oil to deep fry.
  22. Once the oil become hot, add the polis into it and deep fry till it turns light golden brown in color.
  23. Take the polis off the flame into a tissue paper to drain away the excess oil.
  24. Place the polis into a dish, pour the saffron milk all over the polis and allow it to soak into the creamy milk.
  25. Allow the polis to turn soggy in the milk.
  26. Now in a serving dish, take the soaked polis leaving the milk behind.
  27. Take few chopped almonds and garnish it on the paal poli.

Delicious Paal poli or milk poli is ready to be served. Enjoy!

Whole wheat oats cookies


 

Whole wheat cookie is made of whole wheat, oats, milk & butter is a recipe made specially for kids and toddlers as I make them for my daughter.

Ingredients:

  • Whole wheat flour (1/2 cup)
  • Oats (1/2 cup)
  • Powdered sugar(1/2 cup)
  • Cardamom powder (of 3 cardamom)
  • Butter(1/4 cup)
  • Milk(3 tbsp or enough to form a smooth dough)

Method:

  1. In a bowl, add whole wheat flour, rolled oats, powdered sugar, cardamom powder to enhance the flavour of the cookie.
  2. Mix the dry ingredients and add quarter cup of ghee or clarified butter. You can add unsalted butter if you want to replace clarified butter to it as well.
  3. Mix the ingredients till it forms a crumbly texture.
  4. Add 3 table spoon of milk or enough to form a smooth dough.
  5. Divide the dough into small balls and roll out into one centimeter thick disks.
  6. Cut the dough with cookie cutter and give it a shape.
  7. Do the same with rest of the dough and place it on a baking tray.
  8. Pre heat the oven to 180 degree celcius and place the tray in the oven.
  9. Bake for 10 minutes at 180 degree or till the edges turn golden brown.

Remove from the oven and cool. Enjoy this healthy wholesome cookie with a warm glass of milk.

Ela ada



Ela ada is an authentic recipe of Kerala . It is steamed in banana leaf and has a wonderful flavor.

    

Ingredients

For filling
Water (1/4 cup)
Jaggery(1/2 cup)
Cardamom (4, powdered)
Coconut(1/2 freshly grated)

For dough
Rice flour (1 cup, roasted)
Salt(1/2 tsp)
Water to make smooth dough (about 3/4 cup)

For assembling

Banana leaves(2 large)

Method:

To make the filling for ada,

  1. In a pan, add water & jaggery. Mix it well and allow the jaggery to melt.
  2. Once the jaggery starts to melt, add the cardamom powder . Slow the flame.
  3. Add freshly grated coconut, mix well, till the mixture becomes dry.
  4. Our filling is now ready. Switch off the flame and keep it aside and allow it to cool.

Preparing the banana leaf

  1. Take a banana leaf, Remove its stem and cut them into small size.
  2. When we fold the banana leaf, sometimes, it will tear off. Also we want the oily texture of the banana leaf to come out. For this, place it over the flame and move it gently so that it will fold very easily.
  3. Do the same for rest of the banana leaves & keep them aside.

To make the dough,

  1. Take a mixing bowl, to it add roasted rice flour salt & mix well.
  2. Add little by little water to make a smooth dough. I have added about 3/4 cup of water to it.

Assembling & cooking

  1. Take 1 banana leaf, take small portion of the dough, place is at the center and spread it by pressing it gently.
  2. Once done, take 2 tbsp of the coconut & jaggery filling and place it at the center.
  3. Fold from the other side, leaf to leaf, and press it gently from its sides to seal it.
  4. Our Ada leaf is ready, do the same with rest as well. Steam the ela ada in a steamer. I have used an idli steamer. you can use any steamer for steaming. Place the ada in the steamer. Close is with a lid and steam is for about 8 to 10 minutes.
  5. After 10 minutes, check if the ela ada is cooked. It is done by pricking it with a fork and if the fork comes out clean, then the ada is cooked well and nice. Switch off the flame & allow it to cool.

Ela ada is now ready to be served warm. Enjoy it as evening snacks or after meals as dessert.

Baked yogurt



Baked yogurt is very simple to make and is a great dessert. It is made of just 3 ingredients and takes only 15 minutes to make this dessert.




Ingredients:

  • Yoghurt(1 cup)
  • Cream(1 cup)
  • Condensed milk/Nestle milk maid(1 cup)

Method:

  1. Pre-heat the oven at 180 Degree Celcius for 10 minutes.
  2. In a bowl, add ,yoghurt, Condensed milk and mix well. I have used Nestle milkmaid.
  3. Milk gently so that no lumps are formed.
  4. Pour the mixture in a double boiler and bake it for 15 minutes.
  5. In case you do not have a double boiler, take a pan, place a bake tray, pour the mixture in the bake tray.
  6. Now pour water outside of the bake tray in the pan. bake it for 15 minutes.
  7. Alright, after baking for 15 minutes, our baked yoghurt is now ready. Allow it to cool. Refridgerate it for 15 minutes
  8. Garnish it with some chopped almonds.

There our baked yogurt is now ready to be served.

Jam tarts


These jam tarts are very simple to make and a perfect delight for Christmas. It is a wonderful dish which can be made very easily.




Ingredients:

  • All purpose flour (2 cups)
  • Unsalted butter(100 gms, chopped)
  • Icing sugar (3 tbsp)
  • Egg yolk(of 1 egg)
  • Fruit jam/jam of your choice

Method:

  1. In a bowl add all purpose flour, unsalted butter and icing sugar. Mix it lightly and then add eggyolk to make a dough. In case it does not form a dough add of water(1 tbsp) and mix lightly.
  2. Wrap the dough in cling film and place in the refrigerator for 30 minutes till the butter becomes firm again.
  3. Take the dough out and roll out the dough with a rolling pin. Add some all purpose flour to ensure that the dough does not stick on the board or surface.
  4. Cut the dough with a cookie cutter and place it in a muffin tray. Once the pastry is placed in the tray, prick it with a fork and add your favourite jam(1 & 1/2 tsp per tart). I am adding a mix fruit jam but you can add any jam of your choice. Decorate it with strips cut of the dough and bake it in a pre-heated oven at 200 degree celcius for about 15 minutes. Take it out of the oven once the pastry gets a nice golden brown colour.

Easy jam tart is now ready to be served. Enjoy!
