Jam tarts


These jam tarts are very simple to make and a perfect delight for Christmas. It is a wonderful dish which can be made very easily.




Ingredients:

  • All purpose flour (2 cups)
  • Unsalted butter(100 gms, chopped)
  • Icing sugar (3 tbsp)
  • Egg yolk(of 1 egg)
  • Fruit jam/jam of your choice

Method:

  1. In a bowl add all purpose flour, unsalted butter and icing sugar. Mix it lightly and then add eggyolk to make a dough. In case it does not form a dough add of water(1 tbsp) and mix lightly.
  2. Wrap the dough in cling film and place in the refrigerator for 30 minutes till the butter becomes firm again.
  3. Take the dough out and roll out the dough with a rolling pin. Add some all purpose flour to ensure that the dough does not stick on the board or surface.
  4. Cut the dough with a cookie cutter and place it in a muffin tray. Once the pastry is placed in the tray, prick it with a fork and add your favourite jam(1 & 1/2 tsp per tart). I am adding a mix fruit jam but you can add any jam of your choice. Decorate it with strips cut of the dough and bake it in a pre-heated oven at 200 degree celcius for about 15 minutes. Take it out of the oven once the pastry gets a nice golden brown colour.

Easy jam tart is now ready to be served. Enjoy!

Clafoutis – A Classic French Dessert

Clafoutis is a French Classical dessert and a very easy to make recipe.




Ingredients:

  • Prunes(1 cup)
  • Lime juice(of half lime)
  • Grape juice OR Sweet dessert wine(1 cup)
  • All purpose flour(3/4 cup)
  • Sugar(1/3 cup)
  • Salt(a pinch)
  • Vanilla essense (1 tsp)
  • Eggs(3)
  • Milk(1 & 1/3 cup)

Method:

  1. In a bowl, add prunes, lime juice & Grape juice/Sweet dessert wine and mix well and allow it to marinate for 30 minutes.
  2. In another bowl, add all purpose flour, sugar, salt, vanilla essence, eggs, milk and mix the ingredients to make a smooth batter.
  3. Preheat the oven at 170 degree celcuis. Grease a baking dish.
  4. Sprinkle some sugar to coat the dish lightly. After that place the marinated prunes in the baking dish and pour
  5. the batter.
  6. Bake it in the preheated oven for 30 to 40 minutes at 170 degree celcius.
  7. Test the dish to ensure that the batter is cooked thoroughly and remove it from the oven.

Clafoutis is now ready to be served at room temperature. Garnish it with some prunes and enjoy the dish.

Christmas Chicken Pie with Eggplant

Christmas Chicken Pie with Eggplant is a delicious crusty pie made of minced chicken, eggplant and lot of cheese in it. Perfect for this Christmas eve.




Ingredients:

 For 4 persons

To grill Eggplant/Brinjal

  • Eggplant/Brinjal (4 large, sliced)
  • Salt(1/2 tbsp)
  • Cooking oil(enough to grill the eggplant/brinjal, 1 tbsp for every round)

For Chicken

  • Cooking oil (1 tbsp)
  • Garlic(3 cloves, sliced)
  • Rind of Parmesan Cheese (optional)
  • Onion(1, chopped)
  • Oregano leaves(1 tsp)
  • Minced Chicken (250 gms)
  • Salt (1 tsp)
  • Tomato puree(3 tbsp)

Assembling

  • Parmesan Cheese(grated, enough to sprinkle for the layers)
  • Tomato puree (enough to drizzle over the layers)

Topping

  • Parmesan Cheese(3 tbsp, grated)
  • Bread Crumbs(3 tbsp)
  • Oregano leaves (1 tsp)
  • Olive oil (2 tbsp)

Method:

To grill Eggplant/Brinjal

  1. Take the large eggplant and cut it into slices. I have taken 2 eggplant for the dish which serves 2 as main course or can be enough for 4 person as part of a meal.
  2. After you cut the slices, add salt to the eggplant and keep for around 30 mins. This will allow the salt to get absorbed and pull out excess water from the eggplant giving it a very nice golden grill marks when you grill the eggplant.
  3. Heat oil in a frying pan and grill all the eggplant till cooked on both sides. This will take about 3 minutes on
    each side.

For Chicken

  1. In another pan, add cooking oil and allow it to get hot.
  2. Add garlic and saute it for 30 seconds. Add the rind of the Parmesan cheese for added flavor to the dish.
  3. Add onion to the dish and saute till the onion becomes translucent and changes color.
  4. Add few oregano leaves and immediately add minced chicken to the pan.
  5. Allow it to sear on one side and then saute the mince to cook it well.
  6. Add salt into it and cook till done.
  7. After 3 mins add tomato puree and cook it well. Keep cooking till the mixture turns almost dry.

Assembling

  1. Now take a ovenproof baking dish and layer the grilled eggplant slices. Ensure to cover the dish completely so that the bottom is covered.
  2. Add tomato puree and top with the chicken mince mixture. Sprinkle some grated Parmesan cheese and repeat procedure of
  3. layering the eggplant, tomato sauce and cheese.
  4. Cover with another layer of eggplant.

Topping

  1. Make a crumble with parmesan cheese, oregano leaves and breadcrumbs. Add olive oil and mix well.
  2. Top this mixture on top of the eggplant layer. Once the pie is baked, this will give it a nice crunch to the dish.

Baking

  1. Once the above procedure is done, cover it with a aluminium foil and bake in oven at 190 degree Celsius for 20 minutes in a pre-heated oven. After 20 minutes remove the aluminium foil and bake it for a further 10 minutes or till the crust forms a nice golden brown color.
  2. Remove from the oven and allow this to cool for a while before cutting the pie.

Roasted Pumpkin & Beetroot salad

Healthy and delicious Roasted Pumpkin & Beetroot salad.




Ingredients:

  • Beetroot (3, cut into wedges)
  • Pumpkin (250 gms, skin pealed and cut)
  • Salt (2 pinch)
  • Olive oil (1 tbsp)
  • Garlic cloves(4)
  • Honey ( to drizzle)

Method:

  1. In a bowl, add pumpkin, beetroot, salt, olive oil and mix them
  2. Pre-heat the oven at 200 degree Celsius for 10 minutes.
  3. Grease a bake tray, add these vegetables and spread them on the tray.
  4. Roast them in a pre-heated oven for 15 minutes at 200 degree Celsius.
  5. Take out the vegetables and drizzle honey all over the vegetables.
  6. Pop it back in the oven and roast is for 5 minutes.
  7. Take out of the oven and mix the vegetables so that the honey and other ingredients mixes well with the vegetables.

Roasted pumpkin and beetroot salad is now read to be served. Enjoy!

Orange Muffin


Orange muffin is very flavorful, fluffy and very simple to make. It melts into your mouth leaving a delicious sweet orange flavor.

Ingredients:

  • Wheat flour (1/2 cup)
  • Refined flour/Maida (1/2 cup)
  • Baking powder (3/4 tsp)
  • Egg (1, beaten)
  • Butter (60 gms)
  • Orange juice of 1 orange
  • Powdered sugar (100 gms)

Method:

  1. In a bowl, sift wheat flour, refined flour/maida, baking powder and keep it aside.
  2. Beat an egg till fluffy and keep it aside.
  3. In another bowl, melt the butter, add powdered sugar,  orange juice and beat the mixture well to form a creamy consistency.
  4. Add the beaten egg into it and mix.
  5. Add the sift flour and mix it by folding the batter with a spoon to form a lumpy dropping consistency. Do not over mix it.
  6. Greece the muffin tray with butter and add the batter in it half full.
  7. Bake in the oven for 25 minutes at 180 degree Celsius.

Enjoy your orange muffin once it cools down.

Ingredients:

  • Watermelon (small cut, deseed, 2 cups)
  • Mint leaves (12)
  • Lime juice (5 ml)
  • Pineapple juice(30 ml)
  • Peach syrup or Sugar syrpu (10 ml)

Method:

  1. In a glass, add watermelon, mint leaves, lime juice, peach syrup or sugar syrup and muddle it till the juice of watermelon is extracted.
  2. Crush ice and add over the mixture.
  3. Pour the pineapple juice and mix all juices well.
  4. Pour the mocktail in a serving glass and garnish with watermelon and mint spring.

Miloni, the watermelon mocktail is now ready to be served.

Pumpkin Soup – Vegetarian Thanksgiving recipe



Thanksgiving Day is family festival celebrated in US, Canada & other countries. It is the day of gratitude and appreciation, and as well as a sincere thanksgiving, offered to God for all His blessings, and as well as to the family, loved ones and friends for all their support. This day is also called as Turkey day.

Pumpkin Soup – Vegetarian Thanksgiving recipe,  is a delicious and flavorful soup and is served with toast or grilled bread.

Ingredients:

  • Pumpkin (400 gms)
  • Potatoes (2, small size)
  • Tomatoes (125 gms , blanched)
  • Fennel seeds (1 tsp, powdered)
  • Vegetable stock (350 ml)
  • Salt as per taste
  • Garlic (2, skin pealed)

Method:

  1. Peal the skin and deseed the pumpkin and cut into 2 cm thickness.
  2. Peal the skin of potatoes and cut into 2 cm thickness.
  3. Heat a pan, add pumpkin, potatoes, blanched tomatoes, garlic, fennel seeds powder, salt and cover it with vegetable stock till the pumpkin dips in the stock.
  4. Bring it to boil and shimmer it for 30 minutes till the vegetables become cooked & tender.
  5. Separate the cooked vegetables from the stock and blend in a blender adding little by little of the stock to a soup consistency.
  6. After blending, return the puree back to the pan and shimmer it for another 2-3 minutes.
  7. Garnish the Pumpkin soup with grilled bread.

Pumpkin soup is ready to be served.
