Beans toran(Long beans in coconut)


Here is a simple and delicious recipe that my mom would make for me and I enjoyed it every time she made. Hope you enjoy it as well!

Ingredients:

  • long beans (fine chopped)
  • coconut (less than 1/2 grated)
  • green chillies (3)
  • curry leaves
  • garlic (3 bulbs)
  • chopped onion (1)
  • cumin seeds/Jeera (1 tbsp)
  • water
  • mustard seeds (1 tbsp)
  • turmeric powder (1 tbsp)
  • dried red chily(1)
  • salt
  • coconut oil

Method:

  1. Ground coconut grated, green chilles, cumin seeds/jeera, curry leaves, garlic, 1/4 cup water  and make it into a paste.
  2. Heat coconut oil, add mustard seeds, add red chillies, onion chopped, long beans chopped, salt and turmeric powder and saute. Close it with a lid and cook it for about 5 minutes in a slow flame.
  3. Add the coconut paste to the beans and mix well. Close it with a lid for another 2 minutes on low flame.
  4. Garnish it with some grated coconut.
  5. Beans toran (Pyre toran) is  ready to be served.

Vendai kolambu (brinjal drumstick curry)

Ingredients:

  • drumstick (2 pieces)
  • brinjal(cut in large pieces)
  • oil (4 tbsp)
  • mustard seeds (1 tbsp)
  • methi seeds (1/2 tbsp)
  • turmeric powder (1/2 tbsp)
  • dried red chilly (1)
  • tamrind (small lemon size)
  • salt ( as per taste)
  • asafetida powder (1/2 tbsp)
  • curry leaves
  • sambar masala (2 tbsp)
  • jagarry (1 inch)
  • coriander leaves
  • tur dal (2 tbsp, boiled)
Method:
  1. Heat oil in a pan, add mustard seeds, methi seeds, dried red chilly, turmeric powder.
  2. Add drumstick pieces, water and cook it for some time.
  3. Add brinjal once the drumstick cooks.
  4. Add water and boil the vegetables.
  5. Add tamarind water, required salt, asafetida powder, curry leaves, sambar masala, jagarry.
  6. Mix it well by adding some more water.
  7. Add coriander leaves, boiled and mashed tur dal.

Vendai kolambu (brinjal drumstick curry) is ready to be served with steamed rice.

Pachadi (white pumpkin in coconut)

My dad who is passionate about cooking, in this video shows one of the authentic Kerala recipe Pachadi.
Pacha’ in malayalam means ‘raw’. Here, except for white pumpkin, which is boiled and cooked, rest of the ingredients are raw. It way yummy! Hope you will like it. Learn and Enjoy!
Ingredients:
  • white pumpkin (fine chopped)
  • 1/2 coconut ( grated)
  • green chillies (7)
  • curry leaves (3 stems)
  • cumin seeds/jeera (1 tbsp)
  • salt (as per taste)
  • mustard (2 tbsp)
  • coconut oil (4 tbsp)
  • dried red chillies (3)
  • curd (1 medium bowl)
Method:
  1. Grind coconut grated,  cumin seeds (1 tbsp), mustard seeds (2 tbsp), green chilles (7), water (2 cups) and make it a paste.
  2. Churn the curd to make it thin.
  3. Boil and cook chopped white pumpkin.
  4. Switch off the flame, add the churned curd and mix it well.
  5. Add the coconut paste and mix again.
  6. Heat coconut oil in a pan, add mustard seeds (1 tbsp), after it splutters, add dried red chilly pieces and curry leaves. Saute.
  7. Add this seasoning into the gravy and mix well.
Delicious Pachadi is ready to be served as a side dish with steamed rice.
