Beans toran(Long beans in coconut)


Here is a simple and delicious recipe that my mom would make for me and I enjoyed it every time she made. Hope you enjoy it as well!

Ingredients:

  • long beans (fine chopped)
  • coconut (less than 1/2 grated)
  • green chillies (3)
  • curry leaves
  • garlic (3 bulbs)
  • chopped onion (1)
  • cumin seeds/Jeera (1 tbsp)
  • water
  • mustard seeds (1 tbsp)
  • turmeric powder (1 tbsp)
  • dried red chily(1)
  • salt
  • coconut oil

Method:

  1. Ground coconut grated, green chilles, cumin seeds/jeera, curry leaves, garlic, 1/4 cup water  and make it into a paste.
  2. Heat coconut oil, add mustard seeds, add red chillies, onion chopped, long beans chopped, salt and turmeric powder and saute. Close it with a lid and cook it for about 5 minutes in a slow flame.
  3. Add the coconut paste to the beans and mix well. Close it with a lid for another 2 minutes on low flame.
  4. Garnish it with some grated coconut.
  5. Beans toran (Pyre toran) is  ready to be served.

Vendai kolambu (brinjal drumstick curry)

Ingredients:

  • drumstick (2 pieces)
  • brinjal(cut in large pieces)
  • oil (4 tbsp)
  • mustard seeds (1 tbsp)
  • methi seeds (1/2 tbsp)
  • turmeric powder (1/2 tbsp)
  • dried red chilly (1)
  • tamrind (small lemon size)
  • salt ( as per taste)
  • asafetida powder (1/2 tbsp)
  • curry leaves
  • sambar masala (2 tbsp)
  • jagarry (1 inch)
  • coriander leaves
  • tur dal (2 tbsp, boiled)
Method:
  1. Heat oil in a pan, add mustard seeds, methi seeds, dried red chilly, turmeric powder.
  2. Add drumstick pieces, water and cook it for some time.
  3. Add brinjal once the drumstick cooks.
  4. Add water and boil the vegetables.
  5. Add tamarind water, required salt, asafetida powder, curry leaves, sambar masala, jagarry.
  6. Mix it well by adding some more water.
  7. Add coriander leaves, boiled and mashed tur dal.

Vendai kolambu (brinjal drumstick curry) is ready to be served with steamed rice.

Onam special – Olan (Vegetables in coconut milk)

Ingredients:

  • White pumpkin
  • chow chow
  • green chilies
  • coconut milk
  • curry leaves
  • salt
  • coconut oil.
Method:
  1. Boil white pumpkin and chow chow in equal ratio, cut into pieces with 2 green chillies.
  2. Turn off the flame and add coconut milk to it.
  3. Add curry leaves, salt and 1 tbsp coconut oil and mix well.
Olan is ready to be served with steam rice.

Onam special – Erissery (Pumpkin Coconut)

Onam is an ancient festival which still survives in the Modern times. Kerala’s rice harvest festival and the festival of rain flowers which fell on the Malayalam month of Chingam celebrated the annual visit from pathalam of the very noble Demon King Maveli. Onam is unique since king Maveli is revered by people of Kerala from prehistory.

Onam sadya, a feast which is quite elaborate. This is usually a feast served on banana leaves and serves rice along with an array of 14 dishes(extend to 24 dishes). Traditional pickles and papadam are also served. Dessert is usually ‘payasam’, a sweet dish made of milk, sugar and other traditional Indian savories.

I celebrated onam with my cousins a few days ago with pookkalam ( Flower rangoli designs) and a lavish Onam feast.

Here I learnt to make onam Sadya (Feast). I had promised that I will upload the video in a few days, but this was the most challenging thing I have ever edited. Cooking an Onam sadhya is a whirlwind of activity and multitude of dishes being cooked at the same time. Just to find all the clips was a daunting task and the first of the video is now ready. At some point in time I realized capturing the true audio would be impossible as the excited festive jabber kept on interfering with the shoot. So in some areas I have added a few voice over to capture some basic steps of cooking.

Erissery is one of the 14 dishes from Onam Sadya which you will learn today.

Erissery (Pumpkin Coconut)

Ingredients:

  • pumpkin
  • coconut
  • jeera/cumin seeds
  • salt
  • turmeric
  • oil
  • mustard seeds
  • curry leaves

Method:

  1. Boil cut pumpkin with pinch of turmeric. Add required salt after the pumpkin is boiled.
  2. Grate coconut, add jeera/cumin seeds and grind it.
  3. Add the mixture to the boiled pumpkin and mix it well with some water. Bring it to boil.
  4. Heat oil in a pan, add mustard seeds, curry leaves, handful of coconut grated and saute.
  5. Let the coconut change its color to golden brown.
  6. Add this saute to the pumpkin and mix well.

Erissery (Pumpkin coconut) is ready to be served with steam rice.

Lemon Rasam

Ingredients:

  • Lemon
  • Green Chilly
  • Ginger
  • Tomatoes
  • Tur Dal
  • Curry leaves
  • Coriander Leaves
  • Turmeric powder
  • Asafetida powder
  • Pepper powder
  • Jeera powder / Cumin Seed powder

Method:

  1. Cut green chilly, ground ginger, chop tomatoes in a cooking bowl. Add turmeric powder and water and keep it for boil.
  2. Boil Tur Dal, make it a paste and blend it with water.
  3. When the tomatoes are cooked, add the Tur dal water to it.
  4. Add Asafetida powder, pepper powder, jeera powder / cumin seed powder and mix well.
  5. Switch of the flame, add coriander leaves and curry leaves to the rasam. Let the rasam cool for sometime.
  6. Squeze lemon to it.

Lemon rasam is ready to be served with steam rice.

Aloo Jeera

 

Ingredients:

  • Boiled Potatoes
  • Jeera/Cumin seeds.
  • Oil
  • Green chilies
  • Turmeric powder
  • Jeera/Cumin seeds powder
  • Salt
  • Water
  • Coriander leaves

Method:

  1. Heat oil in a pan, add jeera/cumin seeds, chopped ginger, chopped green chilies, turmeric powder, water and sauté.
  2. Add boiled potato cubes, salt, chopped coriander leaves and sauté.
  3. Add pinch of Jeera powder/ cumin seeds powder and sauté.

Aloo Jeera is ready to serve.

Fish Amritsari

Ingredients:

  • boneless slice fish
  • chilly powder
  • oil
  • turmeric powder
  • channa dal flour/bengal gram flour
  • rice flour
  • egg
  • chopped ginger
  • coriander leaves
  • ajwine/ Carom seed
  • green chillies
  • lemon juice.
  • salt
  • chat masala

Method:

  1. Add chilly powder, turmeric powder, channal dal flour/bengal gram, rice flour, egg, coriander leaves, chopped ginger crushed ajwine, chopped green chillies, lemon juice, salt in bowl and mix it with water.
  2. Add boneless fish slice into the bowl and marinate.
  3. Heat oil in a pan and add the marinated fish slice. Medium fry the fish, and take it in a plate.
  4. Garnish it with chat masala and coriander leaves.

Delicious Fish Amritsari is ready.
